15 minute chickpea and chorizo casserole

What to choose…  It’s really difficult to force yourself to choose a first recipe to share when you love food and cooking as much as we do…  This recipe for chickpea and chorizo casserole is foolproof, tasty and done in under 15 minutes. A take on a Nigel Slater classic.

You will need:

  • 1 onion
  • 2 cloves garlic
  • 1 tbsp olive oil
  • 150g chorizo chopped into 1/2 cm thick rounds
  • 1 tin tomatoes
  • 2 tins chickpeas
  • A handful of fresh parsley


Chop the onion and fry gently in 1 tbsp olive oil.  Once it starts to soften, add the garlic followed by the chorizo.  Fry until the oil starts to turn a lovely red colour. Throw in 2 tins of chickpeas, a tin of tomatoes and allow the mixture to bubble for 5 minutes until heated through. Season with salt and pepper and a handful of parsley if you have it.

  1. Yummy success….my 4 year old son devoured this(having helped cook it by peeling onions and pouring in tins) while 2 year old daughter ate most when alternated with spoons of her favourite yoghurt (it is a phase we hope!) . Great to try new tastes with them as neither had chorizo before.

Keep up the cooking and don’t worry about the yoghurt – Molly will only eat meals that involve peaches at the moment (spag bol + peach… yuk!) E

  2. This recipe has been a huge hit in our family. Excuses such as ‘I can’t cook’ or ‘I don’t have time’ don’t work when there are recipes like this around. It’s so quick and easy and is really delicious.
