Nan’s BBQ sauce

My Nan Alice, was a legendary cook.  Back in the day when women stayed at home and took care of their children, she worked as a confectioner, ran a restaurant and raised 8 boys. She made a fantastic barbecue sauce which sadly went with her to the grave. As a tribute to my Nan, I’ve created this recipe for a barbecue marinade. The special ingredient is the smoked paprika which gives the sauce a great flavour, even before it hits the coals.

You will need: (enough to coat 2 racks of ribs and 12 chicken wings):

  • 1 onion
  • 6 cloves garlic
  • 5 tbsp black treacle
  • 2 tbsp sherry vinegar
  • 5 tbsp tomato puree
  • 3 tbsp Worcester sauce
  • 1 tbsp Dijon mustard
  • 1 tsp smoked paprika

Method: Mix all the ingredients in a food processor / blender, spread on the meat and marinade for as long as possible.

We had a great barbecue last weekend with this marinade done on baby back ribs and chicken wings. We also did some plain chicken wings and sweetcorn for Molly which she loved. Delicious!
