Chilly Chilli – A great freezer dinner

Some days even I can’t be bothered to cook.  That’s when it’s great to have something nice to take from the freezer.  One of the best freezer meals is Chilli con Carne.  I’ve been doing this recipe for years – it’s a take on a Jamie Oliver recipe.  The secret – a cinnamon stick.  Make it a few days in advance of eating it to let the flavours get even better and freeze it in portions for eating on a lazy day.

For 8 portions of Chilli con carne, you will need:

  • 2 onions
  • 3 tbsp olive oil
  • 3 cloves of garlic
  • 500 g minced meat
  • 1 red chilli finely chopped
  • 2 tsp hot chilli powder
  • 1 tsp cumin powder
  • 1 cinnamon stick
  • 2 tins tomatoes
  • 1/2 tube tomato puree
  • 1 glass water
  • 2 tins kidney beans
  • Salt
  • Pepper

Method

Use a pan that can be transferred from the hob to the oven.  Fry the onions gently until they become translucent.  Then add the garlic, chopped chilli and minced meat and cook until the mince is browned off. Add the cumin, chilli powder and tomato puree to the browned mince.  Cook for a minute then add the tinned tomatoes, a glass of water and the cinnamon stick.  Cover the mince sauce with a sheet of greaseproof paper,  put the lid on the pan and cook in the oven for an hour at 140C.  After an hour add 2 tins of kidney beans and cook for at least another 30 minutes.  Serve with rice and natural yoghurt.

  1. We enjoyed this and have saved a few portions in the freezer. 4 year old ate all his then said, “my tongue’s on fire!” but he’d like it again for tea. 2 year old preferred just eating the yoghurt! Hubby suggested adding stock cube next time so overall a good family meal.

    • Laura – delighted you enjoyed this one. It’s a firm favourite in our house and great for an emergency when a crowd turns up unexpectedly! Feel free to post some more pics on the FB wall. We loved the cake attempt! Don’t forget to share the site with friends you think would be interested. We love making new friends! Elaine

  2. Hi Elaine, cooked your chilli tonight! Yum! I left out the cinnamon as I’m not a huge fan! Great recipe!

    • Thanks Aine – Glad you enjoyed it. it’s even better on day 2 once it’s had a night in the fridge 🙂

      Have a nice weekend x
