An Olympic Picnic

Lesson #1:  Do not try to set up a classy picnic photo shoot when the food is within reach of a 9 month old….

The Olympics were fantastic and in an effort to be part of it (when it was impossible to get tickets), we took a picnic to Hyde Park and watched it on the big screens.

We ate parma ham, pitta breads, hummus, asparagus and feta salad, cucumber sticks and melon.  It was a big hit with the little lady.  Thanks to Peter and Marie-Christine in Paris for the fantastic parma ham.

For 2 people and a little one you will need:

Hummus

  • 1 tin of chickpeas drained
  • Juice of 1 lemon
  • 1 clove garlic
  • 3 tbsp tahini
  • 3 tbsp olive oil
  • Pinch cayenne pepper

Method:

Blitz all the ingredients together in a food processor.

Asparagus, Feta & Red Onion Salad

  • 8 asparagus spears
  • 1/2 block of feta in chunks
  • 1/4 small red onion (sliced thinly and soaked in cold water for 10 mins)

Method:

Cook the asparagus for a couple of minutes, then run cold water through it.  Chop into pieces and add to the feta and onions. Add the dressing if you like or remove some first for the little ones before adding the dressing.

Dressing

  • 3 tbsp olive oil
  • 1 tbsp lemon juice
  • 1/2 garlic clove finely crushed
  • salt & pepper
