Rigatoni with Artichokes

A really simple meal that takes 15 minutes.  Jars of antipasti are a great way to create a tasty pasta dish in no time.  Artichokes work particularly well.

For 2 adults and a little one you will need:

  • 250 g rigatoni (or penne) pasta
  • 2 tbsp olive oil
  • 3 cloves of garlic sliced
  • 100 g artichokes from a jar (drained of oil)
  • zest of half a lemon
  • 50 ml white wine
  • 1 tbsp capers
  • Grated parmesan, black pepper and basil to serve

Method:

Cook the rigatoni in boiling water.  When it is almost cooked (after about 10 minutes) fry the garlic gently in a pan with the olive oil then almost immediately, add the artichokes.

Stir for a minute then add the lemon zest, wine and capers. Cook on a high heat for 1-2 mins until just heated through.

Drain the pasta and toss with the artichoke mixture.  Serve topped with parmesan, freshly ground black pepper and a few basil leaves.
