A really easy and healthy mid-week treat for all the family.
For 2 adults and a little one you will need:
- 200 g salmon fillet
- 200 g penne pasta
- 3 tbsp olive oil
- 12-15 whole cherry tomatoes (red or yellow)
- 3 cloves garlic thinly sliced
- 50 ml white wine
- 1 large handful of basil leaves chopped
- Salt & freshly ground pepper (optional)
Make a large rectangular parcel out of aluminium foil (like an envelope) and put the salmon inside. Seal it completely by folding down / crimping the edges of the foil. Place the parcel on a tray and bake it in a hot oven (180 C) for about 15 minutes.
In parallel, boil the pasta. When the pasta is almost done, add the olive oil to a frying pan and fry the tomatoes over a medium heat for 1 minute. Add the garlic and fry for 30 seconds. Gently add the wine (the oil will spit as you add the wine) and allow to bubble off for 30 seconds.
Open the foil parcels and break the salmon into chunks. Add the pasta to the tomato mixture in the frying pan. Finally add the chopped basil and salmon. Stir gently and serve. Season with salt and freshly ground pepper.
