Fried squid

Fried squid is delicious and a surprisingly cheap treat.  4 very little squid per person is a good portion for dinner.  This is super served with garlic bread or our home-made chips.  The secret is not to over cook the squid.  Dust it in flour and shallow fry it in vegetable oil for only 10 seconds.

For 2 people, you will need:

  • 8 little squid cut in rings
  • 2-3 tbsp flour seasoned with salt & pepper
  • Vegetable oil
  • 2 spring onions chopped
  • 1 red chilli chopped finely
  • Handful of herbs (mint, coriander, parsley work really well)
  • Juice of 1 lime

Method:

Chop the spring onions, chilli and herbs and place in a bowl.  Coat the squid in flour and heat a good glug of oil in a wok / deep pan.  Once the oil is really hot (test with a piece of bread to see if it sizzles), add the squid a few pieces at a time and shallow fry it for only 10 seconds.  Drain it on kitchen roll and add to the onion, herbs & chilli.  Pour over the lime juice and stir.

    • You should definitely have a go Sally! The main reason I wrote this post was to encourage people to try – it really is very easy and there’s no need to be scared. Get the fishmonger to chop it up for you and don’t cook it for too long. Even molly loves this (and she’s only 11 months) Have fun!
