Pot Luck


‘Pot luck’ happens when there’s ‘nothing’ in the fridge. This might look like a slightly unusual combination – that’s what ‘pot luck’ is all about….  Actually, it turned out really well and was about as healthy a meal as you could ask for.

Serves 2 adults and a little one

  • 100 g wild rice
  • 100 g green lentils (rinsed)
  • 100 g chopped smoked streaky bacon or lardons
  • 1 tbsp olive oil
  • 1 red onion finely chopped
  • 1 red chilli thinly sliced
  • 3 cloves garlic sliced
  • 2 handfuls broccoli
  • 6 mushrooms sliced
  • 1 tbsp light soy sauce

Method

Boil the lentils and rice for 30 minutes.  After 20 minutes, fry the  lardons, onion, chilli and garlic in a pan with the oil.  Allow to cook for 3-5 minutes.

Add the broccoli and put a lid on the frying pan for 2 mins (this steams the broccoli). Add the mushrooms and replace the lid for 2 mins.

Drain the rice and lentils and add to the bacon mixture.  Toss in the soy sauce and serve.
