If you’re like us after Christmas, you’ve had enough big dinners for a while. We enjoyed this quick and healthy supper – a delicious fresh open salmon sandwich.
For each person you will need:
- 1 small salmon fillet
- olive oil
- Salt & pepper
- A squeeze of lemon juice
- 2 slices bread
You can cook the salmon in the oven in a foil ‘bag’ with a drizzle of olive oil, a squeeze of lemon juice and some salt and pepper. Follow the instructions from one of our other salmon recipes.
Once cooked, allow it to cool then break it up into chunks and serve on crusty bread with mayonnaise and capers. Delicious!
