Cheeky snacks! Arancini

These ‘arancini’ (little oranges in italian) are a simple and delicious snack that also work well as a canape for drinks.  We used left-over rice from a stir fry. Chose to add more cheese if you like. We serve ours with mango chutney.

For 2 adults and a little one

  • 100 g leftover rice (basmati works well)
  • 25 g grated parmesan cheese
  • 1/2 ball of mozzarella cheese chopped into cubes
  • 1 egg beaten
  • Flour
  • salt & pepper
  • Sunflower or vegetable oil to fry.


Mix the rice and parmesan together with a good shake of salt and pepper.  Using wet hands, form the rice mixture into golf-ball sized balls.  Stick a small cube of mozzarella into the centre of the balls and cover the hole with rice.

Dip the balls in beaten egg and then flour and shallow fry for 4-5 minutes until golden.  Drain on kitchen paper and serve with mango chutney.
