Here’s another great pasta and broccoli dish. A simple traditional Italian recipe that is light on your pocket but big on taste.
For 2 adults:
- 4 tbsp olive oil
- 2 cloves garlic finely sliced
- 1 small red chilli chopped finely
- 3 tbsp pine nuts
- 250 g sprouting broccoli
- 50 ml wine
- 250 g large pasta shells
- 40 g grated parmesan
- A handful of basil (optional)
- salt & pepper
Heat the oil and add the garlic, chilli, pine nuts and broccoli. Stir fry for 3 minutes then add the wine. Cook for a further 7-10 minutes until the broccoli is cooked but still al-dente.
In parallel, boil the pasta. Once the pasta is cooked, stir it into the sauce and add the cheese. Allow to sit for a minute before serving, sprinkled with basil.
