A take on a recipe by Jamie Oliver (who probably learned it from a greek mother somewhere on a glorious sun-kissed island)….. We had a go in our sunny London kitchen, pretending we were in Mykonos . It takes a while to cook but doesn’t take long to prepare, giving you time to have a drink as it gets all lovely in the oven. Little Molly loves this meal.
For 2 people and a little one, you will need:
- 1 onion chopped
- 100 g smoked streaky bacon (optional for a vegetarian version)
- 2 tbsp olive oil
- 4 cloves garlic chopped
- 2 carrots chopped into 1cm rings
- 2 whole tomatoes chopped
- 1 tbsp tomato puree
- 1 tin tomatoes
- 250 ml water
- 1 tbsp red wine vinegar
- 1 bay leaf
- 2 tins beans (cannellini or butter beans)
- 1/2 a block of feta cheese
- Dried oregano
Method:
Use a pan that can be transferred from the hob to the oven. Fry the onion and smoked streaky bacon (if using) in olive oil until golden. Add the garlic and cook for a minute.
Then add the carrots, tomatoes, tomato puree, water, red wine vinegar and the bay leaf. Let the mixture bubble for 5 minutes. Finally add 2 tins of beans (butter beans, cannellini beans or a mixture of the two) and heat through.
Cover the pan and bake in the oven for 1 hour at 180C. Serve with a chunk of feta and a sprinkle of oregano and olive oil.
