For 6 adults you will need:
- 1.5 Kg topside of beef
- 3 beef tomatoes
- 4 garlic cloves finely chopped
- 6 anchovy fillets finely chopped
- a large bunch of flat leaved parsley finely chopped
- 1/2 tsp herbes de provence
- pinch of crushed dried chilli flakes
- 40 g breadcrumbs
- 2 tbsp olive oil
- Salt & pepper
Pre-heat the oven to 180 C. Put the beef in a large roasting tray and brush it with a little olive oil and some salt and pepper.
Slice the tomatoes in half and shake out as many of the seeds as possible. Mix the rest of the ingredients together (apart from the olive oil) and stuff the tomatoes with the mixture, piling it high over the 6 tomato halves. Drizzle 1 teaspoon of olive oil over each one.
Roast the meat for 30 minutes, then put the tomatoes in the oven. Roast both for another 20 minutes. Take the meat out to rest for 5 minutes and leave the tomatoes in for that time. Slice the meat and serve with a tomato. Gravy, green beans and potatoes are great with this too!
